Recently I have become obsessed with Chard. I have made it several nights and I just had to write about it.
A lot of people probably see Chard as a leafy green, with a weird red stem. I see that too, but man oh man is it delicious. To cook it, I just cut the weird red stems away from the leafy greens and throw them in a bowl. Caution - it will cook down to about 1/3 of the size of the washed leaves.
In a medium sized pan, I heat some olive oil. Add some diced garlic and onions and let those cook for about 5 minutes (until fragrant). Sometimes, I'll add some sliced mushrooms and then I just add the chard and move it around until the leaves have wilted.
Will is super nice and lets me eat the whole bowl, since he HATES chard. Maybe someday he'll learn to love it.

40: Avocado Jalapeno Cornbread
You might have noticed that I am not really one for baking. But I saw this recipe for avocado cornbread that I just had to try. I actually stayed closer to the actual recipe on this one - with the addition of some jalapenos -- because, why not!
Ingredients:
1 cup cornmeal
1/2 cup flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cayenne pepper
2 tsp cumin
5 tbsp butter
2 tbsp local honey
1 cup buttermilk
1 egg
1 bag frozen corn
1 large avocado - diced
1 large jalapeno - diced
Juice from 1 lime
The How To:
Turn on oven to 400
Put 2 tbsp butter and 1 tsp cumin in an iron skillet and stick it in the oven (while oven is still heating)
In a separate bowl, whisk the cornmeal, flour, baking soda, salt, cayenne pepper, cumin together
Melt 3 tbsp butter in a small cup
Mix melted butter and honey
In a medium sized bowl and mix the corn, avocado and jalapeno - squeeze the lime and mix gently
Grab one last big bowl and whisk the egg and buttermilk
Now add the butter/honey to the egg/buttermilk
Slowly add in the dry ingredients and the avocado/corn
Get the hot skillet out of the oven and pour in your batter
Don't worry if it looks like it burning - it's not.
Put the batter back in the oven and reduce heat to 375 - let it cook for about 30 minutes until your fork comes out clean.
This was a little bit of trouble, but oh my. SO worth it.

17: Baked Fried Chicken
Brace yourself - I did two new dishes tonight! Crazy, I know.
Who doesn't like fried chicken but doesn't like the fat roll that comes along with it? Well.. if you answered yes to that question, then Baked Fried Chicken is for you.
Ingredients:
2 Boneless chicken breast
*1/3 cup all-purpose flour
S&P
*1 tsp Seasoned salt
*1 tsp Paprika
Olive Oil
Buttermilk (gross, but delicious with this recipe - trust me)
*all measurements are approximate
The How To:
Place chicken breasts in a bowl of buttermilk and let it soak for about 25 minutes
Preheat oven to 400 degrees
Grab a Ziploc bag and mix the flour, s&p, season salt and paprika and give it a little shake
Put some olive oil in the bottom of a pan (lined with foil, for easy clean up)
Shake excess milk off of the chicken and drop it in flour mixture. Shake the bag until the chicken is totally covered and place in the pan
Bake for 20 minutes on each side
This was a very simple dish and it really tasted like a lighter fried chicken. It was delicious, I wouldn't change a thing.
