61: Spicy Shrimp Stir Fry

Mondays are always nuts, so I figure that is the perfect time for a fast/easy seafood dish. Tonight I chose a spicy shrimp stir fry.

Ingredients:

6 oz soba noodles
3/4 lb shrimp (tails removed)
1 large red pepper (sliced)
3 garlic cloves (minced)
1/4 cup honey
1/4 cup soy sauce
1 tbsp white balsamic vinegar
1 tbsp sesame oil
1/4 tsp ground ginger
1 tsp red pepper flakes (to taste)
2 tbsp sesame seeds
Olive oil

The How To:
Boil the soba noodles for about 6 minutes, drain
Heat some olive oil in a large skillet
Cook red pepper and shrimp for about 8 minutes
Add the soba noodles to the mix, and turn heat to low
In a separate bowl mix honey, soy sauce, vinegar, sesame oil, ginger, red pepper flakes, and garlic
Pour the mixture over the shrimp/noodle mix and let it cook for about 6 minutes
Sprinkle with sesame seeds and serve

I served this alongside some steamed edamame for more asian flair and it turned out delicious.  This dish is Will approved!




When I make this again, I will add some broccoli, mushrooms, and onions to the red pepper/soba mixture and I think it will be 10x better.

35: Jalapeno Shrimp Cakes

Both Will and I really enjoy our seafood and jalapenos... So, I thought I'd try out these Jalapeno Shrimp Cakes.  

Ingredients:
1 lb shrimp - peeled
1 jalapeno - seeded and diced
Garlic
2 tbsp cilantro
2 tbsp panko
S&P
Juice from 1 lime
1 sliced avocado


The How To:
Place shrimp, garlic and jalapeno in a food processor (I use the magic bullet) and pulse until chopped well.  
Combine the mix with all the other ingredients
Form 4 patties 
In a nonstick pan, cook the patties on each side for about 4 minutes



I believe if I made this dish again I would try smaller patties and make shrimp pops instead.  This week our friend Angie wanted to get in on the fun -- this meal is Will (and Angie) approved!

21: Jalapeno Lime Shrimp


I am always browsing pinterest for recipe ideas and that's where I ran across this gem and have been wanting to try it ever since.  Today was pretty yucky weather, but I decided that tonight was the night to try Jalapeno Lime Shrimp.

Ingredients:

Olive Oil
2 tbsp butter
red cayenne pepper (to taste)
1 jalapeno, seeded and diced
garlic
2 medium tomatoes (diced)
1 cup chicken broth
1 lb shrimp 
1 lime (for juice)
a few sprigs of Cilantro
S&P

The How To:
Add olive oil and butter to a large skillet over medium heat
Stir in cayenne pepper
Saute the jalapeno for about 3 minutes
Add the garlic and stir until fragrant (about 1 minute)
Add the tomatoes and cook for about 3 more minutes
Add chicken broth and bring to a simmer
Add shrimp to the skillet and season with S&P 
Cook until shrimp cooked through (about 5 minutes)
Add the lime juice and cilantro
Now you are ready to eat!



This dish turned out a little soupier (yes, that's a word) than I was hoping.  If I made this dish again (and I would) I would only use 1/2 cup of the chicken broth.  I served mine over quinoa with black beans and tomatoes.  This dish was Will approved!

7 of 52: Bangin' Good Shrimp

Will and I are both huge shrimp fans, usually I just saute some shrimp and we dip it in cocktail sauce (with extra horseradish, of course).  But, keeping with the spirit of 52 new dishes I looked up a few shrimp dishes and set on this one for Bangin' Grilled Shrimp Skewers.  This is a super fast dish so it's great for a weeknight.

Ingredients:
2 1/2 tbsp light mayo
2 tbsp Thai sweet chili sauce
1 tbsp Sriracha (to your taste)
1 lb shrimp
Olive Oil
S&P
Sesame Seeds (not pictured)

The How To:
Combine mayo, chili sauce, and sriracha and sit aside.
Put some olive oil in a medium skillet on medium heat.
Add your shrimp, let them cook until they are almost done - about 4 minutes
Add a few sesame seeds for about 1 more minute.

Put your shrimp in a bowl, add the sauce.  Serve!


Will gave this dish, "more of a no than an eh.. but didn't hate it."  Take that for whatever you'd like, there is no science to this rating method.  In my words, we just prefer cocktail sauce.
